turkey day

Is it wrong that I get such joy out of making my Butterball turkey dance on the kitchen counter? I mean, you should see him (or her?) Tootsie Roll. To the left, to the left...

It's inspiring.

okay, so this is an advice free zone..............can I call this a TIP and still get away with it?

• get a tea-towel the thickness of cheesecloth, or actual cheesecloth, big enough to cover your turkey.
• soak it in a bit of olive/veg. oil, not a lot, just enough to cover the whole thing
• season the top of the turkey
• lay the cloth overtop
• baste every 1/2 hour - when the juice is avail - until done

why am I tipin'' you this? 'cause I know fish wants nothing less than a flawless dinner. it works everytime!
